Back in 2006, in a basement apartment in the shadow of Fenway Park, Jake and Avi traded dishes and ideas over cheap beer and boxed wine. Years later, having traveled the globe and eaten at the best restaurants in the world, Jake posed the question to Avi (now an accomplished chef and restauranteur) that Lobster Proper seeks to answer: What if Lobster rolls featured innovative and fresh sauces stuffed into artisan breads?
The two former college roommates and lifelong friends began mixing and matching unique sauces and locally produced breads to find perfect lobster roll after perfect lobster roll. Weddings, farmer’s markets, breweries, and corporate parties all over the Boston area became their playground. Instantly people fell in love, just as Jake had, with a whole new level of lobster.
